The brainchild of 16 wine growers, the Brisighella farmer’s co-operative was formed in 1962, and added an oil mill and performed its first pressing in 1971.
Currently, 90% of the local olive growers are members, jointly producing 60 thousand litres of oil.
The co-operative’s goal is to improve the olive production of the Lamone Valley, an area on the Adriatic slope of the Tuscany-Romagna Apennines, where a single variety of local origin is grown: Nostrana di Brisighella.
The olives pressed come exclusively from members and the oil extracted is bottled and sold by the co-operative on behalf of all the members.
In 1975, with a view to traceability of its oils, the co-operative started giving a specific identification to its products, numbering its bottles.

Organoleptic profile
Its fragrance is clearly with hints of country herbs, tomato, nuts. Its taste is harmonious with firm and well balanced bitterness and spiciness
 
Recommended gastronomic uses
It excels on all kinds of fish (especially mullet, turbot and dentex). Ideal when blended (off the heat) into fish, meat or game sauces.
