The Masseriola farm stands in the southern part of the Daunian sub-Apennines at the border with the Tavoliere plain.
At an altitude of approximately 300 metres above sea level, the farm spans approximately 90 hectares, 29 of which are olive groves of the Coratina and Moraiolo varieties, and the other 61 are dedicated to different kinds of crops.
Olives are milled within 36 hours of being harvested, by stone crushing. The mixing is done at temperatures that never exceed 27° C, and the oil obtained is stored in steel containers in rooms with controlled temperature. The settling process is strictly natural.
Since 1996 the Masseriola farm has been using organic farming methods and is certified according to the USDA-NOP and EUREPGAP standards.

Its scent revels interesting and complex notes of green grass and apple that are replaced by cardoon and almond. Its taste confirms its fragrance. Bitterness and spiciness are well dosed

Recommended gastronomic uses
Excellent uncooked on shellfish and swordfish. It also goes extremely well with soups and pork.
