The Colle Rotondo Farm’s history goes back centuries and, along with a few other lands, is what is left of a very large estate that has belonged to the same family since the year 1700.
Historical documents show that the grove already existed in the year 1296 and was called Collis Rutundus. The farmhouse, originally a watchtower to spot Saracen raids, stands since the year 900 A.D.
The farm is sheltered by the Lepini Mountains, and it spans a whole rocky hillock, at an altitude of 105 metres above sea level. It has a magnificent view of mount Circeo, the city of Sabaudia and the island of Ponza.
Out of approximately 4000 olive trees, 300 have been replanted in recent years and 1300 are under a new system. Since 1992 the farm has complied with the integrated farming system (regulation CEE 2078/92).
Colle Rotondo extra virgin olive oil is produced using only Itrana olives, which are hand picked as they begin to darken, then cold milled on the same day in a certified organic oil mill.

Its colour is green with golden hues. Its fragrance opens with a fruitiness of fresh herbs and notes of artichoke and apple. Its taste confirms its scent. Firm and well dosed bitterness and spiciness.

Recommended gastronomic uses
Excellent on raw vegetables, soups of legumes and rice. Superb on cream of vegetable soup and boiled vegetables, boiled legumes, mushrooms, steamed potatoes.
