The Polizzi Oil Mill opened for business over half a century ago, processing the olives from its own farm and for third parties. Today, Michela Polizzi, along with her family, carries on the tradition by farming olive trees growing at an altitude of 600 metres, in the Caltanissetta Municipality area, right in the heart of Sicily. The most widespread varieties are Nocellara del Belice, Nostrana and Etnea, hand picked and processed within 24 hours in the family run oil mill.
In the year 2000, after renovating the oil mill, a bottling facility was also started. Aside from extra virgin olive oil, the farm’s products range from aromatic oils, foods preserved in oil and traditional Sicilian pâté.

Organoleptic profile
A green oil with golden reflections. Its scent has medium intense fragrances of green olive and leaf. Bitterness dominates spiciness and are pleasantly in harmony.
 
Recommended gastronomic uses
Excellent on baked and au gratin fish, veal roulades with mushrooms, vegetables au gratin.
