In 1968 a few olive growers from the city of Trevi decided to expand the no longer lucrative family production and unite into a co-operative. Soon, there were 59 olive growers as members, which, since the co-operative’s foundation, already had particularly strict internal regulations and to this day continues to control production: olives, all from the Trevi area, are picked as they are starting to ripen, then immediately turned in so that they may be processed within 12 hours.
In 1985 the co-operative partners formed the Trevi Il Frantoio Farmers Union, which since 1994 has had the ISO 9002 quality certification.
During the 1998-99 oil season, a new oil selection, under the brand Olio Trevi, was inaugurated, receiving the PDO Umbria Colli Assisi Spoleto certification.
In 2007 the Trevi Farmers Union Il Frantoio certified its production in compliance with the UNI 10939:2001 standards, and its production system according to the BRC standards.

Organoleptic profile
Green oil with warm yellow hues. In its harmonious scents we discover notes of grass and leaf. The light bitterness is replaced by a pleasant and firm spiciness.

Recommended gastronomic uses
It enhances the flavour of red roasted and boiled meats, soups of legumes or vegetables. Also excellent on salads.
