Bianco oil was born from the love and passion that unite Iolanda and her sister to the Salento area and its olives, as a way to give dignity and value to this noble fruit from a marvellous land.
It sprang from a desire to reclaim, protect and make those centuries old olive groves truly productive, for they are the farm’s true riches, and to produce an oil that is also a means of communication, capable of transmitting its history and process to those who try it: the story of a family and the collective history of a land and its people.
The Bianco oil is produced exclusively from the family’s own olive groves, most of which are centuries old, and from traditional autochthonous varieties such as Ogliarola di Lecce and Cellina di Nardò.
Respect for the environment and an awareness of the benefits this reaps, has led the farm to participate in several different programs to improve the environment and started the conversion process for organic farming, which will enable it to obtain its certification within the next 3 years.

Green fruity with notes of leaf, bitter vegetables and almond. Its taste is intensely bitter and spiciness is firm.

Excellent on bean soup, soups of legumes and vegetables. Ideal for meat carpaccio and fish soup.

Production system
Harvesting is done by hand picking and using pneumatic shakers. Two-phase and a half continuous-cycle centrifugal extraction.
