In Sabina the history of olive oil is very ancient and make part of the traditional culture. Since 1996 this area was the first in Italy to obtain the PDO Certificate.
The oil San Vittore degli uccellatori is the result of processing the olives picked off the trees that are propriety of Trimani family since the end of 1800. The olive groves are settled on the hills of Torri in Sabina at 250 meters above sea level, span 6 hectares with two thousands plants.
The PDO and organic farming oil is processed by olives of Carboncella, Moraiolo, Frantoio, Leccino and Pendolino varieties.
