Since 1926 in Cazzano di Tramigna (a hilly area in the East province of Verona), the Ballarini Family processes with passion the olives. Valtramigna, the area where is located the oil mill, has nowadays about 20,000 olive trees which include the varieties of Favarol and Grignano (about the 60% of the total) Frantoio, Leccio, Moraiolo, Pendolino. Thanks to the favourable climate, it’s since decades that the olive tree has been cultivating in this area (the most ancient trees are 200-300 years old).
The olives are harvested when ripe in order to avoid damages to the fruits and crushed in the farm’s oil mill within few hours after being picked to preserve the freshness of the olives and to retain the unique original properties of the fruit.
The oil is exclusively processed with mechanical equipments at cold temperatures that never exceed 27°C. Ballarini’s oil mill is pleased to welcome visitors to take part in oil tastings also during the milling time from the beginning of October to the beginning of December. Nearby the oil mill there is a sales shop open all the year round.
