The olive groves are on a hilly area at five kilometres from the centre of the town of Palombara Sabina. The farm spans eight hectares and there are trees of Salviana, Leccino, Carboncella, Frantoio olive varieties.
The olives are grown in the traditional way and only organic fertilizations are used.
Hand picking permit to have a healthy fruit and to respect local environment.

Organoleptic profile
A clearly ripe fruity with sensations of grass and vegetable bitter notes. In mouth bitterness and spiciness are light and persistent and do not cover the sweetness.

It is best appreciated on meats and enhances the flavour of fish main courses.
