L'oliveto matarazzo

The Oliveto Matarazzo represents the entire processing production of extra virgin olive oil: organic farming olive groves - continuous-cycle cold extraction in the farm’s oil mill – storage in steel tanks with nitrogen– bottling.
Olives are exclusively picked off the trees from the lands proprieties of Counts Matarazzo of Licosa: “Grotte Basse”, “Cardone Mountain” and “Leano Mountain”, in the Viterbo province.
Olives are harvested at the proper ripening stage and crushed within 12 hours at processing temperatures that are in compliance with cold extraction standards.
This olive oil is also guaranteed by organic farming and PDO certificates, because only eco-friendly farming techniques are used: from the fertilizing of the plots to the processing of the olives in the oil mill.
