The olive groves of the Hispellum farm are located on the hills of Spello, along the road leading to the ancient castle of Collepino and the nearby Vallegloria monastery, which is mentioned in the 1178 Papal Bull of Pope Alexander III as having thousand year old olive trees. A fascinating environment full of history, charm and beauty, which inspired the colours and paintings of Pinturicchio.
The farm’s olive groves span 15 hectares, at an altitude ranging between 400 and 500 metres above sea level, exposed to the Eastern winds. The farm’s olive trees are almost exclusively of the Moraiolo variety, a name which derives from the introduction of olive trees in the Umbria Region by monks coming from Greece and Constantinople. The monks planted the olive trees and removed any stones they found and used them for building walls to divide the various properties: walls, known as mori in their dialect, finally transformed into moraioli (which roughly translates as wall builders).
Olives are exclusively hand picked when partially ripe; they are then placed in special, well ventilated boxes and are taken to the oil mill, where they are kept far from any heat sources at a temperature ranging between 14° C and 20° C.
