Silvi Sabina Sapori

The Silvi Sabina Sapori farm is located in the heart of the Roman Sabina (40 km North-East from Rome), an area where olive trees have always been a predominant natural element and growing them a part of the culture.
The farm’s plots include old and new Salviana, Carboncella, Leccino and Frantoio variety olive trees, which the Silvi family has been growing for more than three generations, accumulating experience in the field.
Currently the farm is run by Domenico Silvi, who inherited traditional knowledge from his father Pietro, and who is backed by the innovative ideas of his children Daniela and Pietro and granddaughter Anna.
The farm complies with the standards required by the Sabina protected designation of origin, and also obtained certification for its own Quality Control System to the UNI EN ISO 9001:2000 standard.
Since 2005, the new tasting room has been open to visitors: two tasters registered with the regional board, Silvi family members themselves, offer professional and exciting tasting tours through a selection of the farm’s products.
