The “Vally Trapanesi” PDO area is a rich land with a history, dating back thousands of years,; this area, known as the “two valleys”, is surrounded on one side by the white salines of Trapani, and on the other by the countryside of Erice. Here, the environment, climate and land all contribute to bearing always extraordinary fruit.
Carmela Di Caro s.r.l. uses rural traditions and local olive varieties to spread their love of oil and its culture, and to promote the PDO Valli Trapanesi certification of its own extra virgin olive oil.
The growing and harvesting timeframes are strictly respected and olive groves are tended year round, using methods that do not affect the biological system. Harvesting is done only by stripping, picking directly from the plants (and not from the ground, after olives have fallen off) so as to obtained undamaged fruit.
Finally, olives are milled immediately after being picked, or within less than 48 hours.
