The agricultural holding Cerrosughero is located in the Town of Canino, in the heart of the Maremma region in Lazio on the border with Tuscany, in an area with a high olive-growing vocation and of considerable archaeological and naturalistic value. The business began in 1993 when its owner, Laura De Parri, decided to leave Rome to take care of her family business. In 1999 the business produced its first label, which coincided with the marketing of the new DOP (protected denomination of origin) Canino. Since then, many new products and developments have followed, such as the construction of the bottling facility, of the oil mill and store. The olive groves are located on hilly land of tufaceous and limestone origin, with a particularly favourable microclimate. They extend for about 20 hectares and include 5000 plants of different ages belonging to the cultivar groups Caninese, Frantoio, Leccino, Maurino and Pendolino. All agronomic activities are practised whilst fully respecting the environment, limiting the use of fertilizers and pesticides and carefully pruning plants.The olives are harvested in the early stages of veraison, at different times depending on the cultivar, and are carried to the oil mill the very same day. The new oil mill in continuous operation, built in 2010 in a specific structure, uses the latest technologies to keep the organoleptic qualities of fruit unaltered. The olives, are carefully washed and crushed with control of the operating temperature that never goes above 26°. The resulting olive oil, after being filtered, is stored in stainless steel tanks in controlled temperature environments (15-17°). The agricultural holding, which produces a range of excellent oils that are strongly linked to this area, has been a leading oil producer for some years at both regional and national level, as confirmed by the many awards it has received over the years.
