La Mola farm is located between Rome and Rieti, near the Farfa Abbey, on the Sabine hills, an area famous for its oil since Roman times. Anna Maria Billi, with her daughters Paola and Francesca, not only runs the farm, but she also started bottling the La Mola oil in 1996. The calcareous origin of this permeable, dry land, has allowed the farm to obtain PDO certification for its production, which uses local olives.

Organoleptic profile
Its colour is yellow with green hues. Its scent is characterized by delicate and harmonious hints of almond and tomato. Its taste is sweet and spicy.
Recommended gastronomic uses
Excellent on cream of chickpea soup or mushrooms au gratin. A few drops are an excellent substitute for mustard or honey on matured, hard cheese.
