Perfect for people who choose natural food; it is an extra-virgin oil obtained from different olive varieties cultivated with the organic farming method and therefore in complete respect for the environment. Its best use is uncooked, it has a fruity olive-like taste with a herbaceous and almond-like scent, it tastes sweet with a slight tingling. This oil is obtained from the following olive tree varieties available singularly or jointly in the olive-yards: Cima di Bitonto or Ogliarola Barese, Coratina e Cima di Mola in variable proportions. Olives are harvested directly from the tree by hand or with mechanical devices. For the olive oil extraction the only mechanical and physical processes permitted are those that allow to produce olive oil avoiding any alteration of the fruit characteristics. The oil must be produced within two days after the harvest.
