The farming company "LA ROSCIOLA S.S. dei f.lli Tariciotti" is located in San Vito Romano , Rome. It extends over the eastern foothills of the Prenestini Mountains from the conformation of hill about 700 m above sea level. The climate and the terraced terrains promote the cultivation of olives.
The olive harvest takes place during veraison (the period when they change from intense green to purple-red) and is carried out with extreme care at the ripes moment. The olives are harested with mechanical systems and broght that same evening to the olive press and pressed with in the day. The pressing is a continual process characterized by mixing at a low temperature in order to not alter the organoleptic qualities and in order to maintain the three basic requirements of pure extra virgin olive oli that can be summarized in terms of flavor: spicy - bitter - fruity.
ROSCIOLA is a particular olive quality of our region, its name derives from its reddish color.
Organoleptic profile
The oil is fruity mature, it is medium spicy and has an aromatic characteristic of a grass scent, almond and artichoke. It has a high content of polyphenols. The low ratio of unsaturated/saturated fatty acids and oleic acids result in a oil with high fluidity.
Recommended gastronomic uses
This oil is raccommended with fish, hors d'oeuvres, white meats, rawor cooked vegerables and soup.
