Oro by La Poderina Toscana is prepared by following an accurate field selection of the perfect point of growing for the famous Olivastra Seggianese olives that strictly adhering to the organic certification. The organic production (certified by Q Certificazioni) gives you the genuineness of this extra virgin olive oil, supported by the pedoclimatic features of Monte Amiata that allow to produce without chemical components due to weather and land that favor the growing of the olive tree.
The new P.D.O. Certification assure the origin of the product from eight villages around the production area that following the rules for Seggiano PDO production; it's the only PDO for extra virgin Olive Oil that is made with just one variety: it's a unique variety (monocultivar);
The most important steps of Seggiano PDO are: harvest must be hand picking (not with machines), the time between harvest and extraction must be less than 18h; olives must be stocked in plastic boxes; oil mill must be modern with stainless steel machines with temperatures, times and water adding checks; storage of the olive oil must be under nitrogen; the bottling must be done in dark bottles with the PDO Seggiano sticks in each one of them.
All these working processes and the know-how of its creator Davide Borselli make "Oro" a very good oil with a lot of aromas.
Organoleptic profile
Recommended gastronomic uses
"Oro" can be use in fresh and delicate fish, tomato sauces or fresh vegetables. Cooked vegetables and typical Tuscan soup or bruschetta. Pinzimonio with mixed vegetables (especially artichoke), mayonnaise and in delicate sauté. It gives a special flavour to chocolate muffin when substituting butter for "Oro".
