"... Its aroma is definite and ample, with rich hints of artichoke, chicory and wild thistle. Its taste is elegant and rotund, with distinct fragrant hints of officinal herbes, especially mint and rosemary, together with spicy notes of black pepper and a sweet almond finish. Bitterness is strong and pungency is distinct. It would be ideal on bruschette with tomatoes,chianina beef carpaccio, with porcini mushrooms, tuna salads, artichoke purée, rpasta with meat souce, blue fish ou gratin, barbecued lamb, grilled chicken, hard mature cheese...."
