A perfect climate, the passion for nature and organic agricolture, the special care for the olive trees make "Vicopisanolio" a first quality extra virgin olive oil. The oil is from the hills, at the slope of Monte Pisano, looking the medieval borgo of Vicopisano famous for its pieve and for its towers, especially for the Brunelleschi ones. Here the organic farm "Frantoio di Vicopisano" owns 2500 olive trees of frantoio variety. The olives are hand picked at the perfect ripeness and they never touch the ground. they are crushed, within the same day of the harvest, at the oil mill "Antico frantoio toscano del Rio Grifone" that is inside the farm which is the most ancient and at the same time, the most modern mill of the area. The olives are here cold pressed and the oil is then filtered and analized in order to verify the quality parameters: acidity, peroxides and polyphenols. After the storage in stainless steel containers, to protect the oil from air and light, at a controlled temperature, the oil is bottled.
Organoleptic profile
The “VICOPISANOLIO – ORGANIC TUSCAN PGI ” Extra virgin Olive oil has a green grass and fresh olive parfume. It is full of almond and artichocke smell and has a lovely green-gold colour. If it is consumed just after the pressing, it is lively, slightly stings the palate and has a pleasantly bitter flavour. Then, over time, it mellows and softens.
Recommended gastronomic uses
Recommended uncooked; delicious on bruschetta and with main course dishes, salads and cooked vegetables, soups and grilled fish and meat. Excellent for fish and vegetable fry and suited for vegetables and tuna in olive oil.
