It is extracted by hand-skimming the small percentage of olive oil that rises naturally to the surface of the olive paste before the centrifugation. It is obtained by selected olives, harvested in "La Fenice" estate owned by the Galantino family since the 60s. An excellent extra virgin olive oil, winner of international awards. You can find it in the best gourmet shops around the world.
Organoleptic profile
Light fruity, with very rich floral and herbaceous aromas, almond and artichoke aftertaste, pleasant notes of green tomatoes.
