The Extra Virgin Olive Oil, l'Olio di Zagarise ®, originates exclusively from the preSila hills of Catanzaro, by cultivars of the variety "Carolea". A recent research of nanotoxicology has determined that Zagarise has the purest air of Europe! The olive-trees around Zagarise are planted from 400 to 700 metres above sea level, often on the rock, with a Mediterranean climate. An ideal environment that allows the best techniques of treatment and harvest for the olives and the conservation of the olive oil - a high quality product. The quality of an Extra Virgin Olive Oil is in fact the consequence of many factors: the variety of the cultivar, the typology of the land, the climate, the exposure to the sun of the olive-grove, the treatment of the olive-trees, the modalities and times of the harvest, the quality of the transformation, and the ways of conservation. All of these elements are key considerations to the Oiland owners.
Organoleptic profile
Limpid Olive Oil, yellowish green color, the nose is broad and moderately persistent, with hints of leaf, unripe vegetables and olive paste at the right ripeness. On the palate, slightly sweet with a hint of bitter and spicy, pleasant and well-dosed. A the end, a slight feeling of almond aftertaste.
