The Quattrociocchi family has been growing olives since the year 1888, their passion being handed down through the generations. The farm, which is still the Quattrociocchi home, is located amongst centuries old olive groves on the Alatri hills, in the heart of the Ciociaria area. The olive grove spans approximately 120 hectares and has 34,000 trees of the Moraiolo, Leccino and Itrana varieties.
In what concerns the growing techniques, the farm follows the standards set for organic farming.
The whole product processing cycle takes place within the farm: from harvesting the olives to the crushing, which is done directly in the farm’s own oil mill. The oil is then stored in steel silos, where it remains until time for bottling.

Organoleptic profile
A light green oil with golden notes. Its intense fruity of fresh grass is replaced by notes of cardoon and green tomato. Bitterness and spiciness are well balanced. Spiciness is pleasantly firm.

Excellent uncooked as seasoning, it enhances the flavour of barbecued red meats and legumes.
