The Sabinum Farmer’s Association is comprised by 30 members, who own 600 hectares of land with 70,000 olive trees. The farms go from the Farfa River to the ruins of the ancient city of “Cures”, capital of the Sabines. The production centres are Fara Sabina, Coltodino, Farfa, Castelnuovo di Farfa and Canneto, where the largest olive tree in Europe is found. The association’s main goal is to increase distribution of its oil throughout the nation, as well as exporting to foreign markets. The Sabinum extra virgin olive oil obtained PDO in 1999, and is made with local olives that are milled in a continuous-cycle facility immediately after being picked.

Organoleptic profile
Its colour is green with yellow shades. Its fruity is light with delicate hints of green olive and grass. Slight bitterness and spiciness confirm its sweetness.
Recommended gastronomic uses
It can be savoured uncooked on raw or cooked vegetables, creamed pumpkin or peas, barbecued fish. Excellent also for roasting and frying.
