Pellegrino LLC was founded in 1990, as a result of generations of labor, begun at the end of the 19th century by the family ancestors. The Pellegrino Family business dates back to 1890, when Fabrizio Pellegrino, along with his wife Antonietta, opened a small grain, cereal, flour, oil and wine business. In little more than one hundred years, the vast Pellegrino Family holding was consolidated. “La Spineta” Manor Farm is located about 10km from Andria at an altitude of 250m, behind the Murgia Barese. The 23,000 olive trees are predominantly of the Coratina varietal and the remaining 10% of the Ogliarola Barese, Carolea and Peranzana varietals. To this day, beginning in spring when the olive trees start to bloom, until autumn harvesting time, each phase of cultivation is monitored with the utmost care. Only the best olives are taken to the farm’s traditional stone mill to become extra virgin olive oil. The main part of the farm comprises several rooms dating back to 1544. Inside, a votive niche hollowed out in the tufa stone immediately attracts the attention of visitors. The other rooms were built subsequently. The main manor house was constructed in 1936. Ample parking and a factory outlet are available to visitors who want to take advantage of guided tours and tastings. Numerous tourist attractions are present in the area, such as the fabulous Castel del Monte and, in the town center, various historic monuments and churches.

Organoleptic profile
Intense and fragrant bouquet with marked aroma of freshly picked olives. Fruity and persistent to the taste, harmonious and pleasantly smooth, sweet almond background flavor. Golden yellow color with vivid greenish highlights.

La Spineta’s extra virgin olive oil can be matched with all intensely flavored dishes such as legume soups, salads and some typical local vegetables like broccoli rabe. It is indispensible for preparing typical Mediterranean specialties.
