Uliva has become a symbol of the Alto Garda Trentino and represents the best in the area as being certified with the DOP Garda Trentino and made only with the indigenous variety, Casaliva. Obtained only at the beginning of the oil campaign, usually at the end of October and beginning of November, from green olives and so early maturation, is produced since 2008. In its short life it received the highest awards at national and international level as well as being very appreciated for its packaging. It is obtained from a strict selection of batches of olive in the olive grove, and lots of oil, which get obtained. For this reason its production is quite limited, but despite this has spread throughout the Italian peninsula and in major international markets. Organoleptic profile
Medium fruity with mainly green notes of freshly cut grass and green almond with notes of bitter rocket salad and chicory. Taste strong but balanced, pleasantly bitter and more decisive in the final with a nice spicy peppery note.
Recommended gastronomic uses
It is a robust oil, but delicate, that you can adapt to the classic combinations with raw vegetables or grilled fish from the lake or consistent side dishes, but the best combination is with carpaccio of beef (salted meat) and strangolapreti.
