The organic farm of Rosellina Di Salvo is situated in the area of Petralia Sottana(PA) at an altitude of 450 mt. The farm is part of the large Estate Kibbo' purchased in 1930 by the owner's grandfather Liborio Di Salvo. Thanks to the owner initiative , the farm 's productions, tradionally dedicated to cereal growing, has now been converted in part to intensive , production of wheat, while an area of 20 hectares has been converted to the cultivation of walnut trees.Moreover 3600 , olive trees cultivation of nocellara del belice and biancolilla have also been planted.the organic olive oil kibo' produced in the farm is an entirelyorganic product which has been awarded the denomination DOP VAL DI MAZARA.

Organoleptic profile
The Extra vergin Kibo' Pdo Val di Mazara from organic farming is a beautiful limpid intense yellow colour with light green hues.Its aroma is ample and rotund,rich in fruity hints of medium ripe tomato, together with elegant fragrant notes of mints , basil, sage.Its taste is complex and vegetal,with a flavour of broad beans, lettuce, celery,and spicy finish of black pepper.Bitterness is strong and pungency is distinct.
Recommended gastronomic uses
Perfect on Greek-style salads, and excellent for enhancing the flavour of potato soufflés and vegetable puddings.
