Sololio
The cooperative was established in 2004 in order to enhance the work of its three partners, the Bruno sisters. The business handles the entire production process, “from the tree to the bottle”, performing all olive processing operations, followed by the bottling and retailing of the oil. The cooperative is located in the heart of a vast expanse of centuries-old olive trees between the northern part of the province of Brindisi and the southern area of the province of Bari, in the Ostuni countryside, universally recognized as the “White Queen of Olives”. The partners own a total of 50 hectares of land on which they cultivate approximately 6000 olive trees. A number of the trees are centuries-old, others are younger. Currently the cooperative is able to obtain a global production of 150,000 to 250,000 kg of olive oil from the Ogliarola, Coratina, Cima di Melfi, Frantoio, Biancolilla, Cassanese and other varietals. Processing is carried out both in antique buildings and newly-built structures. The cooperative owns an inviting retail store in the heart of the old town center of Ostuni where, in addition to sales of the product, customers are treated to oil tastings and demonstrations of olive oil processing techniques illustrated by video.
