The Taurino Donato e Rosaria farm is located in Squinzano (Lecce- Apulia). It is run by siblings Donato and Rosaria, young entrepreneurs working in the farming industry who have been business owners since 1985, assisting their parents, Pino and Maria, who founded the farm, which includes approximately 150 hectares of specialized olive groves. The farm has its own modern oil mill, equipped with a continuous-cycle oil extraction system with controlled temperature, where olives can be milled within 2-3 hours of being harvested. Currently two types of Extra Virgin Olive Oil are being marketed: - Polaris, a light fruity oil extracted mainly from local Cellina di Nardò variety olives, with a small percentage of Ogliarola Salentina; and Sirius, a mild fruity oil derived from blending Cellina di Nardò (60%) and, depending on the year, Picholine, Nociara, Leccino, Frantoio or Carolea (40%).
